3 Ravens Golden is a pre-lager ale style synonymous with Dusseldorf, Germany. Spicy, floral and herbaceous notes from Saaz and spalt hops combine with toasted malts reminiscent of biscuits and fresh baked bread. Smooth and easy-drinking with soft balancing bitterness.

3 Ravens White is an exotic ale, base on traditional Belgian Witbier. Sweet barley malt is balanced with tart wheat and spiced coriander and citrus peel, resulting in a rich yet quenching brew.

3 Ravens Black is a subtly complex stout. A bold yet hospitable beer, with roasted and chocolate malts to call you in from the cold, sweet Munich and caramel malts to warm you and oatmeal to wrap you in silky comfort.

Unfiltered Australian Pilsner
Yeast and hop driven Australian Pilsner inspired by pale, dry and bitter North German Pilsners, brewed with distinct Australian hops and malt. Bavarian lager yeast esters combine with sweet hop notes and subtle spice for a thirst quenching, easy drinking New World Pilsner. Summer (a Saaz derivative) – with it’s relatively low alpha acid – provides a soft, progressive bitterness and fruity flavours reminiscent of apricot and melon, while Ella and (experimental variety) 035 lend subtle fruit and spice aromas such as mango, grape and pepper. This easy-drinking full strength lager is a celebration of Australian produce. Local barley and hops provide unique aromatics, subtle flavours and a thirst-quenching bitterness to balance a clean, dry finish.
WILD RAVENS SERIES
The Wild Ravens series is an homage to traditional wild ales, with stylistic influences and processes borrowed from both old and new world. A variety of fermentation and maturation techniques are employed to create complex beers primarily featuring funk and acidity, with bottle re-fermentation offering exciting cellaring potential and flavour evolution. Champagne-style 750ml bottles feature artwork recalling the “3 Ravens” legend as documented by our co-founder and original brewer Ben Pattison. As the story goes, Odin sent his two loyal ravens on a mission to identify the secret to human happiness, so he could create a potion to alleviate him of his duties – and allow him to take an extended vacation. Loki got wind of this and sent his prankster raven Jack along to spy on and troll them. Long story short Loki ended up joining Odin’s gang, introducing the elements of creativity and imagination (Hugin & Munin are known for boring practical things like Sight and Memory/Knowledge) – akin to a third eye – reflecting our own story as an Engineering company venturing into the brewing world.

A beer of mixed fermentation inspired by the Flemish style Red Ale. Produced using various fermentation and maturation techniques including kettle souring, abbreviated fermentation, maturation in old wine barrels with bacteria and wild yeast and blending of young and old ale. Inspired by Flemish style red ales and included processes of kettle souring, abbreviated fermentation, maturation in old wine barrels with lactic acid bacteria and wild yeast, and re-fermentation with fresh local Angelina plum juice. Saison blended with Oak Aged Sour
A dry saison brewed in collaboration with our friends at The Commons (Portland, OR). Inspired by their flagship “Urban Farmhouse” but brewed with local ingredients, this beer also features a portion of barrel-aged golden sour ale. Fruit and spice, very dry, mildly acidic.

A new 3 Ravens tradition inspired by the Solera method. House-malted barley, aromatic Australian hops and our fruity English yeast are combined with a 5 year old “stock ale” for an intriguing blend of fresh and aged flavours. A portion has been reserved and will be blended into all future vintages, and on occasion, released unblended. Enjoy now or cellar for years.

3 RAVENS & BRISBANE BREWING CO - BRIZ FIZZ ● 4.0% ABV ● Draft
Kettle Sour NEIPA
A sour and hoppy collaboration between Brisbane Brewing Co and 3 Ravens brewed in Thornbury, Victoria. The team decided to brew something kettle-soured – a technique which both breweries embrace – but with an aggressive hopping schedule akin to 3 Ravens' Juicy IPA. This golden beer, featuring Vienna and Wheat malts, rolled Triticale and a touch of acidulated malt was soured overnight using a very fruity souring culture before a second boil was performed and the first of four hop additions was made to the whirlpool. Fruity London Ale yeast was pitched on transfer to fermenter while the second hop addition (and first dry hop) was made. The beer was dry-hopped mid-ferment with a large dose of hop hash, and again post-ferment before recirculation on the dry hops for maximum hop punch. The hop varieties used were some of the newest and most experimental to surprise and delight the beer world with: Idaho #7 drawing comparisons to Mosaic with it's complex notes of tangerine, ruby grapefruit, forest pine and black tea; Eureka! providing Simcoe-like orange as well as guava and dank resin; and Denali rounding it out with pineapple, mango, pine and a woody spice. All three hops deliver the flavour of a pine forest, while the aroma leans more towards lemonade and gooey mango.
JUICY IPA ● 6.0% ABV ● Draft
New England IPA
In the endless pursuit of hoppiness, we've taken some quite extreme measures (and hops) to create a fresh new take on the intentionally hazy Vermont-style IPA. We've done without crystal malt and boil hops, relying instead on Australian-grown Triticale (a hybrid of wheat and rye) and rolled oats, heavy whirlpool and dry hop additions – including one very generous (and hilariously rule-breaking) dry hop addition at the start of fermentation. A cult hop line-up of Hallertau Blanc, Moutere, El Dorado, Citra and Amarillo hops deliver intense aromatics of candied lemon, lime zest, guava, white grape and passionfruit. The inimitable English top-cropping yeast lends peach and apricot esters while transforming the early-dry hop addition into what can only be described as “breakfast juice”. With minimal bitterness and a soft palate courtesy of the protein-rich Triticale and Oats, this is best summed up in one word: Juicy
LITTLE RAVENS TRIPEL ● 9.0% ABV ● 330ml Bottle
Brewed to celebrate Belgian National Day 2017, this strong Belgian-style Abbey Tripel is inspired by a famous Canadian-brewed example of the style and showcases their distinctive house yeast strain. Tripel fermentation featuring yeast sourced from one of our favourite exponents of the style in Quebec, Canada. Expect a soft maltiness reminscent of fresh baked bread, spicy and herbal hop notes and a floral yeast character with complex fruit (pear, banana, apricot) and spice (pepper, clove, allspice). A smooth, creamy palate and mousey carbonation leading into a dry finish with refreshing acidity, alcohol warmth and a balancing bitterness.
THE DRUID 2017 ● 10.0% ABV ● 330ml Bottle/Draft
Barrel Aged Belgian Quadrupel
The infamous Druid, 2017 vintage is here. A 10% Belgian Quadrupel/Belgian Strong Dark Ale aged in freshly emptied Port and Shiraz (ex Mt Langi Ghiran) barrels. The Druid is as arcane and eldritch as the name suggests. Dark malt sweetness combines with raisin, fig and plum from the wine barrel ageing process to form an extremely smooth and dangerously easy drinking beer. Subtle berries from the wine, and a pleasant balancing oak tannin. Pure decadence!
LITTLE RAVENS MANGO LASSI IPA ● 7.0% ABV ● 330ml Bottle/Draft
Sour Mango+Spiced IPA with Lactose
A mildly acidic and fruit forward Milkshake IPA* inspired by the popular Indian yoghurt drink. Brewed with milk sugar (lactose), fruity hops, mango puree and cardamom, it is also gently soured using a live yoghurt culture. Complex, tropical fruit salad and breakfast juice aroma with hints of lemon zest, fresh ginger and a distinct milkiness. Bright fruit and lactic acid combine with dry-hop bitterness on the palate and balance the lush silkiness of the rolled oats and unfermentable milk sugars. Fresh, fruity and incredibly unique.
*Milkshake IPA is a modern derivative of the New England IPA – a hazy, protein-rich, low bitterness hop driven beer, with the Milkshake versions including lactose and fruit puree. We decided to sour ours to enhance the Lassi-like characteristics!
LITTLE RAVENS SMOKED OYSTER STOUT ● 5.5% ABV ● Draft
Smoked Oyster Stout
Some time around the turn of the 19th century, the Irish discovered – through proximity more than anything - one of the greatest beer and food pairings of our time: Stout and Oysters. The combination might have come about as a cheap and basic pub feed, but the beauty of the pairing quickly spread, with former British Prime Minister Benjamin Disraeli writing to his sister in 1837: “I dined or rather supped at the Carlton with a large party of the flower of our side, off oysters, Guinness and broiled bones, and got to bed at half-past twelve. Thus ended the most remarkable day hitherto of my life.” To this day, the pairing still remains one of the most enjoyable and, for many, most surprising of pairings. The bitterness and acidity of the roasted malts contrast to the creamy texture of the oyster, while the brininess compliments and adds depth to the malty flavours of the beer. The term “Oyster Stout” originally referred to Stouts befitting of the pairing – but many brewers have since taken quite a literal interpretation, adding real oysters during the brewing process. To celebrate the launch of our craft beer and oyster bar “BeerMongers” at the Preston Fresh Hood Market, we brewed a very special batch of our luscious Oatmeal Stout “Black” to serve with Oysters at our bar – brewed using Pacific Oyster shells that were smoked for several hours over hickory wood. By recirculating the beer through the smoked shells over two days, we were able to infuse a distinct minerality and complimentary smoked character to the silky smooth Stout – which makes the pairing even more magical.
