Mead is sometimes called Honeywine, but this is a misnomer. It is no more a wine than beer is. It is an alcoholic beverage that is produced by fermenting a solution of honey and water. To be classified as Mead no less than 51% of the fermentable sugars must come from honey. Depending on local traditions and specific recipes, it may be flavoured with spices, fruit, or hops. It may be still, carbonated, or sparkling, and it may be dry, semi-sweet, or sweet. It is, without a doubt, the worlds oldest fermented beverage, occurring naturally long before man discovered the secrets of the process.

There are many mead styles but the below styles are the most common:

Show mead: A term which has come to mean "plain" mead: that which has honey and water as a base, with no fruits, spices or extra flavorings.

Hydromel - Hydromel literally means "water-honey" in Greek. It is also the French name for mead. It is also used as a name for a very light or low-alcohol mead.
Braggot - Originally brewed with honey and hops, later with honey and malt with or without hops added.
Metheglin - Metheglin starts with traditional mead but has herbs and/or spices added.
Melomel - Melomel is made from honey and any fruit. Depending on the fruit-base used, certain melomels may also be known by more specific names (see cyser or pyment for examples).

Cyser - A blend of honey and apple juice fermented together.
Pyment - Pyment blends honey and red or white grapes.

Bochet - A mead where the honey is caramelized or burned separately before adding the water. Yields toffee, caramel, chocolate and toasted marshmallow flavors.
Capsicumel
- A mead flavored with chilli peppers, the peppers may be hot or mild.

A blend of honey and boysenberries.  The boysenberries and honey balance each other, this mead pairs well with any dish.  The latest batch is made with EVEN more boysenberries, which adds even more fruit notes... YUMMY!

Cyser (Honey & Apple): Apple
Our Cyser (mead made from apples and honey)  is made from Sunnycrest Apple cider of Londonderry NH, the  fresh pressed apples add a tart start with semi-sweet finish.  Such a light, refreshing taste it can accompany any dish that is rich in flavor or just enjoyed as a festive or aperitif wine, pairs well with cheese plates, poultry or just on its own.

This mead is made with saffron, one of the most expensive spices in the world. Saffron has been cultivated by humans for millennia, this light mead is an homage to its storied past.

Metheglin (Honey & Spices): Meadowfoam Honey, Habanero Peppers, Cacao Nibs
Brazen: to face with defiance or impudence. This mead is made with meadowfoam honey, habanero peppers, and roasted cacao nibs. The sweet start sets the stage for the intensely strong heat that the the habanero brings, with a rich creamy finish from the cacao nibs.

(fruit mead): DESIRE Barrel Aged Sam Adams Utopian barrel

We took one of our flagship meads, Desire, and we aged it for an additional year in one of our Utopian barrels.  The oak firms up the back currant, black cherry, and blueberry notes with just the right amount of tannins. Refined and incredibly tasty.

Roasted cocoa nibs, and a hint of vanilla... add such a smooth light and dreamy chocolate note to this honey wine.  A dessert wine that is a perfect after dinner treat.

Indulge is made from Madagascar-Bourbon vanilla beans, Vietnamese Cinnamon, honey, water and yeast. Sometimes we all need to give into our desires and indulge. Sweet, but not overly so, well balanced and reminiscent of a cinnamon bun.

One  of our biggest selling meads made from local apple cider with Madagascar-bourbon vanilla and Vietnamese cinnamon spice added. Cyser (Honey & Apple): Apple, Aged in Jim Beam barrels
We took the very last New Hampshire apples that were available to us, which we had fresh pressed into apple cider. This fresh cider was delivered the day it was pressed to our Meadery, where we blended it with honey and let it ferment, then we let it age in freshly emptied Jim Beam barrels. The aging process took over 6 months. The ending result is oh so heavenly and oh so cherished. It's not the like any of the other honey apple meads that we make.

This mead is made from Madagascar-Bourbon vanilla beans, honey, water and yeast.  The vanilla flavors blend with the honey to create this delicious delight with a strong yet balance flavor.  The aroma is vanilla and wildflower honey. Good partner to aperitif, pastries or desserts.

Each of our “Au Naturel” meads is made from a single varietal honey and is as unique as its floral source. Meadowfoam flowers grow in Oregon, when the wind blows the flowers flop around and it looks as if the field is covered in foam. This honey has the most interesting flavor, it's like a toasted marshmallow.

Pyment (mead with grapes): Orange Blossom Honey, Riesling grapes, Barrel Aged French Oak
A pyment made from riesling grapes and orange blossom honey, and aged in medium char French oak casks for 2 years. The Riesling notes are light but to the fore with a surprisingly drier-than-usual finish for the style. Nuances of oak from the barrel adds an intriguing nutty finish without overpowering the other flavors.This one will make you want to dance in the moonlight

Each of our “Au Naturel” meads is made from a single varietal honey and is as unique as its floral source. Orange Blossom honey features a light citrusy flower, similar to how an orange grove smells. Well balanced with light floral honey notes.

The meaning of Temerity is excessive confidence or boldness; audacity.  This other than standard wine is aged and fermented in our Utopian barrels, for at least six months.  This is one of the most profound wines made from honey you will ever try.  Dry and assertive blackcurrants balanced by the oak.
